Lotus Root Soup Recipe

Leng Ngau Tong (莲藕汤) is one of the great soups, suitable for any day and occasion. It has health benefits ranging from aiding digestion to boosting one’s immune system.

Lotus root is known as an excellent source of dietary fibre and is high in vitamin C and B. Its crunchy texture makes it a suitable choice for many stews, braised dishes and soups in Asian cooking.

Rinse the Beans and soak them overnight.

Rinse and put all the ingredients in Filtered Water, bring it to a boil.

Simmer for about 1-2 hours.

Add Salt to flavour.
