Shiitake and Vegetable Stew Recipe

Ingredients:

Soup stock - use organic chicken or organic pinto beans (for vegan stock)
Black fungus
Wakame (or Arame) seaweed
Carrots
Celery
Old Cucumber
Cauliflower
Garlic
Ginger
Turmeric
Red Dates

Method:

1. Add the above ingredients into a medium sized pot to boil in the stock.
2. Season with Toasted Sesame Oil, Himalayan salt, Mirin, Tamari / Shoyu, along with a dash of Bénédictine D.O.M. (optional)
3. Cook in medium-low heat for 4-5hrs
Enjoy this nourishing meal on its own or serve with rice/congee
