This unique variety is cultivated mainly for harvesting young shoot tips, branches and leaves for vegetable uses. Young pea shoots are deliciously well flavored. This vegetable is considered as delicacy, excellent for quickly cooked in stir-fry and salad, or blanched and used in soups.
Dou Miao (Snow pea shoots) are nutrient-dense. A two cup serving (16 ounces or .45 kg) , contains considerable amounts of Vitamins A, B-6, C, E, and K, folate, thiamin and riboflavin, phytochemicals, are packed with full of carotenes-strong antioxidant that protects cell from damage and help prevent certain diseases.
