A rare blend of organic heirloom apple varieties grown on family owned organic farms on the shores of the Great Lakes, an ideal apple growing area due to the seasonal lake effect. It is not just organic. Heirloom apples mean these are original species of apples and not hybrid.
Apples are slowly pressed and lightly filtered through a Swiss made Bucher juice press, using no 'pressing aids' or enzymes. The juice is slowly transformed into the finest Organic Apple Cider Vinegar.
Eden Organic Apple Cider Vinegar is naturally fermented with "mother" of vinegar, a friendly natural bacteria culture similar to starter. Mother appears as cloudiness or strand-like chains of connected protein molecules, which are formed from the naturally occurring pectin and apple residue, and is present in the final product. The presence of mother indicates the best quality raw vinegar.
The juice goes through a two step fermentation process. The first step is called the primary fermentation to reach the desired alcohol content. The second fermentation is to change the alcohol into acetic acid. It is then slowly and patiently aged in 20,000 gallon Cyprus wood casks for up to 3 months. Rich in acetic and organic acids.
Eden Organic Apple Cider Vinegar is also 5% acidity with a 3.5ph. It is raw and unpastuerized, no heat is used in any step of processing. It has been tested free of E-coli. Also no strain of E-coli bacteria can survive in 5% acidity.
