Mung Beans (NG)
Also known as green bean by the Chinese, mung bean is a member of the kidney bean family and has been an integral part of Chinese cuisine for centuries. The Chinese believe it to be good for the heart, circulatory system, liver, gall bladder and reducing swelling due to its diuretic nature.

Preparation: To prepare dessert, soak beans overnight. Drain off water. Then, boil and simmer under medium heat for 1-2 hours (4-5 hours under low heat) until soft and add honey or brown rice malt and sago. After sprouting for 5 days, the crisp and crunchy sprouts are widely used in Chinese cooking or just eaten fresh.
