HARUSAME MUNG BEAN NOODLE (WHEAT FREE)

Harusame is a very thin noodle made from mung bean starch. When it is cooked, it appears to be transparent and can be used in Chinese style soups, salad, nabe (pot cooking) or alone with ponzu. The manufacture of harusame is quite different from other noodles. Extruded mung bean starch is boiled in hot water, dried, soaked in water for 10-20 hours, and then dried again outdoors.
Preparation: Boil harusame in hot water for only 2-3 minutes, drained and rinsed with cold water. It is ready to be used in salads or soups without pre-boiling.

Storage: Keep in a cool, dry place.
