Watercress is a perennial, semi-aquatic plant that contains over 15 essential vitamins and nutrients including vitamins C, B1, B6, K and E, iron, calcium, magnesium, manganese and zinc.
It is part of the mustard family and is favored for its distinct peppery-tasting leaves. Watercress is delicious eaten raw or cooked in soups or with meat.
Watercress is great in salads, soups or as a garnish. Follow these steps to prepare watercress.
Step 1: Place the watercress on a chopping board. Use a sharp knife to trim the thick stalks from the watercress.
Step 2: Transfer the watercress to a bowl or sink of cold water. Wash. Drain and pat dry with paper towel.
Step 3: For best results, separate any slightly yellow and limp sprigs from the crisp green sprigs and discard.
