With more than 300 different types of honey on the market in Singapore and beyond, how do you know which one is the best for you? Often categorised by the flowers from which they are harvested, each type of honey has their own beneficial properties and flavours.
Honey can be categorised based on its texture - liquid, granulated, creamed, chunked or unprocessed. It can also be raw or unpasteurised honey, where raw honey is extracted and unprocessed from the comb, whereas pasteurised honey is heated and strained to get rid of contamination. Honey can also be unifloral and made up of one single flower or multifloral where the nectar is made from a range of different species of flowers.

The other 5 are Manuka, famed for its high antibacterial effects, Pohutukawa (a tree with deep roots, absorbing trace minerals found only in deep soil), Tawari, Kamehi and Rata. This honey is superior to the common clover honey due to its herbal blending and minerals, with the forest trees located high up in the alpine regions, with rich soil and fresh air.
Raw Forest Birds Nest Honey

The hives are not squeezed on the spot but left to drip on a sieve to filter into the tank, for high hygiene, minimum fermentation and maximum nutrients. This whole process is done sustainably with only the top part of hive harvested to leave remaining for bees and their larvae to ensure continued production for future years to come.

Dew honey is considered a delicacy in Europe. Its rich, slight sweet taste and characteristic dark colour comes from aphids which suck on the sap of plants, forming a layer of misty sweet dew on the plants - hence the name “dew honey”.
